If you’re like us and decide on a spur of the moment adventure then chances are your plans will need to be flexible. Little did we know when we planned on an excursion to Yellowstone that all accommodations had been book 2 years in advanced, YIKES! In that case your options are to stay in Jackson, Wy or West Yellowstone, Mt. Seeing as the drive to the park was an easy 20 minutes from West Yellowstone we decided to make that our HQ. West Yellowstone is a rustic mountain town known for its plethora of outdoor activities as well as being the western entrance to Yellowstone National Park. If you get a chance, book one of the scenic boat trips or helicopter tours in town. Theres an abundance of sleeping accommodations to choose from; camp grounds, chain hotels, and luxurious boutique inns. The town has 2 small family owned supermarkets along with several dozen eateries. We wanted to maximize our time exploring so we opted on purchasing box lunches.

Ernie’s Bakery and Deli is a an affordable European styled cafe with lots of options if you follow our route. After spending all day hiking in the wilderness it was a nice contrast to come back to a bustling small town. We have a tradition, borderline obsession, with eating at every BBQ restaurant we come across in our travels. After some careful deliberation we chose Firehole Bar-B-Que.

Im not going to lie, it looks a little shoddy at first glance. Holy Cow looks can be deceiving. They had some of the most incredible brisket this foodie has ever tasted. It was so tender and juicy that my sandwich was just falling apart in my hands. The bark on that brisket, man I’m telling you, it was intense. You also have to get the Smoked Bison Sausages. They come in regular or jalapeño cheddar. I ordered both, DUH.  Sweet tooth run in my family so I had a hankering for dessert. Luckily there are several ice cream shops on the main strip. All said and done we were glad to have chosen this small town to be our base of operations during our trip to Yellowstone.
